Taco Potatoes blend baked potatoes and taco toppings into a flavorful, fun, and filling dish—perfect for dinner or entertaining.
Ingredients
4 large russet potatoes
1 lb ground beef or turkey
1 packet taco seasoning
1 cup shredded cheddar cheese
1/2 cup sour cream
1/2 cup salsa
1 cup shredded lettuce
1/2 cup diced tomatoes
Optional toppings: jalapenos, avocado, green onions
Instructions
Preheat oven to 400°F (200°C). Scrub potatoes, prick with a fork, and bake for 50-60 minutes.
In a skillet, brown ground meat. Drain fat, add taco seasoning and water. Simmer for 5-7 minutes.
Slice baked potatoes lengthwise, fluff insides with a fork.
Fill each potato with taco meat.
Top with cheese, sour cream, salsa, lettuce, tomatoes, and optional toppings.
Serve hot and enjoy!
Notes
You can substitute ground meat with black beans or tofu for a vegetarian version. Microwave potatoes for a quicker option.
