Description

Cheesy Cabbage Casserole
This keto-friendly cabbage casserole is a warm, hearty delight loaded with savory ground beef, tender cabbage, cheddar cheese, and zesty canned tomatoes. Itโ€™s the perfect low-carb comfort food, ready in just 30 minutesโ€”ideal for busy weeknights.

Ingredients

  • 1ย poundย lean ground beef
  • ยฝย mediumย onionย chopped
  • 2ย clovesย garlicย minced
  • 3ย cupsย chopped cabbage
  • 15ย ouncesย canned diced tomatoes
  • 8ย ouncesย canned tomato sauce
  • 2ย teaspoonsย Italian seasoning
  • 2ย teaspoonsย salt
  • 1 ยฝย cupsย shredded cheddar
  • Minced parsleyย for garnish

Instructions

  • Brown the Ground Beef:
In a large skillet over medium heat, add the ground beef. Cook while breaking it apart with a spatula until it begins to brown.

  • Add Onion and Garlic:
When the beef is about halfway cooked, stir in the chopped onion and minced garlic. Continue cooking until the beef is fully browned and the onions are soft.

  • Incorporate Cabbage and Tomatoes:
Add the shredded cabbage, canned tomatoes, tomato sauce, Italian seasoning, and salt to the skillet. Stir everything together until well combined.

  • Cook Until Tender:
Cover the skillet and let it simmer for about 15 minutes, or until the cabbage has softened to your preferred texture.

  • Add Cheese and Finish:
Remove the skillet from heat. Sprinkle the shredded cheese evenly over the top. Let the casserole sit uncovered for 5 minutes to allow the cheese to melt.

  • Garnish and Serve:
Just before serving, top with freshly chopped parsley for added color and flavor.

Notes

  • Cheese Swap: Feel free to use mozzarella, Monterey Jack, or your favorite cheese blend instead of cheddar.

  • Spice it up: Add crushed red pepper flakes or hot sauce for a little heat.

  • Extra Creaminess: Stir in a dollop of sour cream or cream cheese for a richer texture.
